Back to School: Chunky Monkey Waffles

It seems like September came and went so quickly, as we are already done with the last full week of the month! I remember as a kid September was a fun month but always difficult because going back to school after summer vacation was brutal.

Growing up I honestly believe that I had(still have) the best parents ever! My Dad always helped me with my homework and big projects. I remember this one time where I had a speech on the blue whale in elementary school and my Dad being the techie guy he is, helped me find a recording of blue whales to play in class! Easily, I had the best speech.

My Mom is super creative and so incredibly thoughtful. Our house was always full of fun craft supplies. One of my favorite memories is when my Mom made a special dinner for April Fools day. She made meatloaf “cupcakes” with colored mashed potatoes for “frosting” and we had toasted angel food cake with orange frosting as a “grilled cheese” sandwich. We had to eat our dessert before we could eat the “grilled cheese.” SO COOL!

Another thing my parents did was surprise us with a special breakfast every now and then before school. My Dad was in charge of making scrambled eggs (sometimes with cheese!) and my Mom made Chunky Monkey Waffles or pancakes.

These are super easy to make and a very special surprise for your kids to wake up to! IMG_5796

Ingredients

  • 1 c SweetStacks Mix
  • 3 T greek yogurt (instead of oil)
  • 2/3 c milk
  • 1 egg
  • 2 ripe bananas
  • 1/3 c mini chocolate chips (you can use regular but mini is the best!)
  • Whipped cream for serving

Directions

  1. Combine SweetStacks Mix, greek yogurt, milk and egg.
  2. Mash 1 banana and fold into batter.
  3. With the other banana I like to cut into small pieces then fold into batter.
  4. Add and fold in mini chocolate chips.
  5. Distribute evenly in waffle iron.
  6. Serve with smiles and whipped cream!     IMG_5799  IMG_5805
