Puffy Pancake with Roasted Bourbon Peaches

Try something a bit more boozey for brunch! This recipe is both easy and delicious!

Ingredients 

  • 1/2 c SweetStacks Mix
  • 1/2 c Milk
  • 4 T Butter
  • 1/4 t baking powder
  • 2 eggs
  • 2-3 Peaches (preferably fresh)
  • 2 T Bourbon
  • Brown Sugar for sprinkling
  • Honey

Directions 

Puffy Pancake 

Preheat oven to 425 degrees. In a pie pan or round baking dish melt 2 T butter in the oven while preheating. In a small bowl whisk together SweetStacks Mix, Milk, eggs and baking powder. After oven is done preheating take pan out and pour mixture in and bake for 20 minutes. Leave oven at 425 for the peaches!

Roasted Bourbon Peaches 

Slice 2-3 peaches and arrange them in another pan. Cube the other 2 T of butter and place over peaches along with 2 T of Bourbon (more if you would like, but don’t get too crazy.) Drizzle honey over the peaches and place in the oven for 20-25 minutes.

Sprinkle brown sugar over the puffy pancake and roasted peaches on top.
