Apple-Berry Snacking Cake (2017 Recipe Contest)


2 tablespoons melted butter
⅔ cup SweetStacks Original Gourmet Pancake and Waffle
1 teaspoon baking powder
½ teaspoon salt
2-xlarge or 3 medium eggs
1 cup sugar
1 teaspoon finely grated fresh ginger or ginger paste
1 teaspoon vanilla extract
1 large Granny Smith apple, peeled cored
6 oz blackberries, blueberries or raspberries
½ cup chopped pecans

Cream cheese frosting
4 oz cream cheese, room temperature,
4 oz butter, room temperature
1-2 cups powdered sugar
1 teaspoon vanilla


Preheat oven to 350 degrees. Brush bottom and sides of a 9 inch cast iron skillet or 9 inch cake pan, with 1 tablespoon of melted butter.

In a small bowl combine pancake mix, baking powder and salt. Set aside.

In a large bowl beat sugar, (reserve 1 tablespoon for later use) eggs, ginger and vanilla. Add pancake mixture until just combined. Dice ½ of the apple into small pieces and fold it into the batter. Fold in ½ of the berries and ½ of the pecans.pour batter into prepared pan.

Thinly slice remaining apple and arrange it on top of the batter. Brush apples with remaining 1 tablespoon butter and sprinkle with reserved sugar. Top with remaining pecans and berries.

Bake for 40 to 45 minutes or until top is browned.

Serve warm or at room temperature with whipped cream or frost lightly with cream cheese icing.

Cream Cheese Frosting
Whip cream cheese and butter until fluffy. Add powdered sugar and vanilla and continue to whip until combined and spreadable.
