Candied Bacon Corn Fritters (2017 Recipe Contest)


½ lb Bacon
3 Tbs Brown sugar
¼ cup Milk
1 Egg
1 cup Sweetstacks Gourmet Pancake Mix
2 cups Corn (fresh, thawed or canned)
4 cups Canola oil
Maple Syrup for dipping


Preheat oven to 350 degrees.
Lay bacon strips onto a baking sheet and sprinkle with brown sugar.
Bake for 10 minutes or until bacon is crispy and sugar is melted.
Remove from heat and chop into small pieces. Set aside.
In a large mixing bowl, combine milk and egg. Whisk to incorporate.
Add Sweetstacks Gourmet Pancake mix and stir gently.

Fold in corn and candied bacon.
In a medium saucepan, heat oil (medium high heat).
Drop batter into hot oil using a small cookie scoop or spoon.
Fry fritters for 3-5 minutes, flipping often to ensure even browning.
Once golden brown, remove from oil and drain on paper towels.

Serve warm with maple syrup for dipping!

Serves 6 (9-15 fritters depending on size)
