Chicken Waffle Sandwich (2017 Recipe Contest)

Ingredients

For the Waffles:
1 cup SweetStacks Gourmet Pancake & Waffle Mix
2/3 cup whole milk
1 large egg
2 tablespoons vegetable oil
3/4 cup sharp cheddar cheese
2 tablespoons chives, chopped
1/4 cup pistachios, coursely chopped

Maple Mustard:
1 tablespoon stone ground mustard
1 tablespoon honey
1 tablespoon maple syrup

For the Sandwich:
4 frozen crispy chicken strips, prepared according to package directions
6 slices of cooked bacon
lettuce
tomato

Instructions

1. Mix waffle ingredients together. And cook according to package directions. Divided the waffles in half forming the "bread" for the sandwich.

2. Mix maple mustard ingredient together.

3. Assemble the sandwiches by laying a bottom waffle. Spread on maple mustard. Lay 3 strips of bacon on each sandwich. Place 2 chicken strips on each, slice thinner if needed. Lay lettuce and tomato on top. And top off with another waffle.

Yield 2 sandwiches
