Chicken Waffle Tender Melt (2017 Recipe Contest)


8 waffles prepared with SweetStacks Gourmet Pancake & Waffle Mix Original
1/4 cup mayonnaise
1/4 cup blue cheese
2 tbsp hot sauce
1 garlic clove, minced
vegetable oil, for frying
1/2 cup all purpose flour
2 tsp hot sauce
1 egg, beaten
1 tbsp water
1 cup panko bread crumbs
3/4 teaspoon Cajun seasoning
12 chicken tenderloins
salt, to taste
8 slices provolone cheese
12 slices bacon, cooked
1 ½ cups arugula


Preheat oven broiler.
Prepare waffles according to package directions. Set aside to cool.
In a bowl mix together mayonnaise, blue cheese, hot sauce and garlic. Set aside.
In a heavy skillet heat 2” of oil.

Place flour in a small bowl. In another bowl mix hot sauce, egg, and water. In a third bowl mix panko and Cajun seasoning. Coat chicken in flour, then in egg mixture, then in panko mix.

Add chicken to skillet and cook for 4 minutes or until cooked through and golden brown. Season with salt, to taste.

Place 4 waffles in a baking dish and top each with 1 slice of cheese, 3 chicken tenders, 3 slices of bacon, equal amounts of arugula and another slice of cheese. Top with remaining waffles. Broil for 2 minutes until the cheese melts. Drizzle with mayo blue cheese sauce.
