Chocolate Mandarin Crepe Cake 2


Chocolate Crepe Ingredients
2 cups SweetStacks Gourmet Pancake Mix

3 tablespoons baking cocoa powder

5 tablespoons sugar

2 cups milk

2 eggs

6 tablespoons vegetable oil

pinch of salt

Orange Creme Ingredients
6 ounces cream cheese, softened

1 tablespoon orange zest (about 1 orange)

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

half pint whipping cream

1.45 oz. milk chocolate bar


Prepare crepes by combining all the ingredients in a blender, mix just until smooth. Spray a 7-8 in. crepe pan with non-stick cooking spray. Pour a scant 1/4 cup batter onto pan over medium heat to cook crepes. When bubbles start to appear on the batter flip the crepes over and cook other side, prepare at least 10 crepes. Spread crepes out to cool.

Prepare Orange Creme in a large mixing bowl. Beat cream cheese and orange zest until smooth, add powdered sugar, vanilla, and whipping cream; beat until stiff peaks form.

Place a crepe down on serving platter, spread with 1/4 cup orange creme, repeat process with the remaining 9 crepes.

Meanwhile prepare orange sauce by draining the juice from the mandarins into a small heavy sauce pan (spread mandarins on a paper towel lined plate to dry) add the orange juice and sugar, stir to dissolve sugar and boil for 12 minutes until liquid is reduced to a 1/2 cup. Place in fridge or freezer to cool and thicken.

Grate chocolate bar over cake or make curls with a small sharp knife. Garnish the top of crepe cake with the chocolate curls and mandarin oranges. Keep cake refrigerated until ready to serve then drizzle with orange sauce and serve. Enjoy!!

*Cooks note: Instead of making a cake; individual crepes can be filled with creme, mandarins, and grated chocolate, then drizzled with orange sauce.
