Ingredients

Crêpes

1 cup SweetStacks Gourmet Pancake Mix
2 eggs
1 cup milk (different if you want to do chocolate crêpes)
2 TBL melted butter
1/4 cup baking cocoa (for chocolate crêpes)
Sliced strawberries (or any fruit for filling)

Watermelon Salad

1/2 of a seedless watermelon
juice of one lime
mint

Instructions

Crêpes

Combine SweetStacks pancake Mix and eggs. (Instead of just using a whisk you can also throw everything in a blender) This is also where you add the baking cocoa for chocolate crêpes.
Add milk (for chocolate, add 1/2 cup more milk) and melted butter and whisk together.
In a hot pan, ladle (1 to 1.5 ladles) crêpe batter and using a circular motion with your wrist, make sure a thin layer of the batter covers the surface of the pan.
When edges become golden brown/ the batter bubbles a bit, flip over. To help flip I used the help of a rubber spatula and my regular spatula. This can be tricky!
Fill crêpes with favorite fruit or spreads!

Mint Watermelon Salad
After cutting watermelon into cubes toss in a large bowl adding lime juice and chopped mint. Ta Da!
