Mini Glazed Walnut Banana Chip Breads – 3RD Place Winner (2017 Recipe Contest)


Non stick cooking spray
3 cups Sweetstacks Gourmet Pancake & Waffle Mix
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
3 large eggs, room temperature
5 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup sugar
2 large ripe bananas, roughly mashed
1 cup banana chips, roughly chopped
1/3 cup walnuts. roughly chopped
1 2/3 cups milk

Drizzle Glaze
2 cups powdered sugar
1/2 teaspoon vanilla extract
4-5 tablespoons milk, as needed


Spray the sides & bottom of eight mini loaf pan molds with non stick cooking spray; set aside. Preheat oven to 350F. degrees. In a bowl, stir together the pancake mix, cream of tartar & baking soda; set aside. In a large mixing bowl, whisk together the eggs, vegetable oil, vanilla extract, sugar, and mashed bananas. Stir in the dry ingredients with the egg mixture; stir in the chopped banana chips, walnuts and milk until blended. Divide the batter evenly into prepared pans; place the loaf pans on a baking sheet and put in the oven to bake for 30-40 minutes depending on your pan size. Begin checking the center of the breads for doneness at 25 minutes by inserting a pick in center and looking for it to come out clean. Adjust the bake time as needed depending on your pan sizes. When the breads are done, remove the pans to a cooling rack for two minutes then remove them to the rack to cool completely.

Meanwhile, add the powdered sugar and vanilla extract in a bowl; add two tablespoons of the milk and whisk together. Continue adding the milk, a tablespoon at a time and whisking, until sugar comes together into a slightly thickened glaze that can be drizzled from a spoon over the top of the cooled banana breads. Makes 8 mini banana bread loaves.
