Pancake Meat Pies (2017 Recipe Contest)


For the dough:
2 1/3 cup SweetStacks Gourmet Pancake & Waffle Mix
1/3 cup melted butter
½ cup water

For the filling:
1 tablespoon olive oil
12 oz. pork sausage
7 oz. coleslaw mix
½ green pepper, diced
1/3 cup saurkraut
1 tsp. pepper


1. Preheat oven to 400 Degrees F. Combine butter and mix in a medium bowl with a fork. Add water and combine. Turn out onto a countertop coated with pancake mix. Sprinkle the top of dough with pancake mix and knead until a smooth ball. Divide dough into 4 balls and use a rolling pin to roll out into 6-inch circles.

2. In a large skillet, cook filling ingredients over medium-high heat until sausage is brown and veggies are soft.

3. Spoon ¼ cup of filling on half of dough circle. Fold dough over filling. Press edges together and crimp with a fork. Spread egg white over top if desired. Bake for 15-18 minutes or until light brown.
