Red Velvet Pancakes w/ Cream Cheese Frosting

Ingredients

2 cups SweetStacks pancake mix

1-1/3 cups buttermilk

1 TBSP cocoa powder

2 eggs

4 TBSP vegetable oil

2 tsp. vinegar

1 oz. red food color

Cream Cheese Glaze

2 oz cream cheese, softened

¾ cup powdered sugar

1 ½ tablespoons milk

½ teaspoon vanilla extract

powdered sugar, garnish

Instructions

Mix SweetStacks pancake mix, buttermilk, cocoa powder, eggs, vegetable oil, vinegar, and food coloring. Blend together with a whisk or spoon.

Let the batter sit for 10-15 minutes, while you make the glaze.

In a medium size bowl, add all of the cream cheese glaze ingredients and blend until smooth and silky. Set aside.

Heat griddle to medium heat until water drops “dance” on contact. Spray griddle with non-stick cooking spray or butter. Use 1/4 cup batter per pancake. Flip when bubbles start to break on the surface of the pancake. Cook from 1 to 1.5 minutes on each side until fully cooked. Remove and stack pancake on plate and spread a layer of the cream cheese glaze. Repeat with another pancake. Stack the 3rd pancake and add more cream cheese glaze and sprinkle with powdered sugar. Serve.
