Ingredients1/2 cup maple syrup
2 tablespoons Dijon mustard
2 teaspoons apple cider vinegar
1/2 cup finely chopped dried apple (see directions)
3 cups SweetStacks Gourmet Pancake & Waffle Mix plus 1 tablespoon
1 pound maple sausage
8 oz shredded swiss cheese
1/4 cup minced scallions, white part only
1/4-1/2 cup milk
InstructionsPreheat oven to 350 degrees.
Grease a shallow baking pan. Whisk first three ingredients together and set aside or refrigerate until serving time.
Toss dried apple in 1 tablespoon pancake mix before chopping for easier handling. In a large bowl, mix all remaining ingredients except milk until well combined. Add milk slowly, using only as much as is needed for dough to stick together. If it gets too sticky, you can add a little extra pancake mix to adjust it. Shape into 1 inch balls and place on the pan in a single layer.
Bake 20-25 minutes until balls reach an internal temperature of 160 degrees.
Serve with dipping sauce on the side or drizzle over the top.
