Sweet Potato Waffles with Candied Pecans

Ingredients

Waffles

1 cup SweetStacks Gourmet Pancake & Waffle Mix
2/3 cup milk
3 TBL oil
1 egg
1 TBL all spice
1 tsp cinnamon
3 TBL Brown sugar
1/3 cup Sweet potato puree (cook and purreƩ one sweet potato)

Candied Pecans

2 cup Pecan pieces or halves
1 TBL cinnamon
1 egg white
1/4 cup brown sugar
1/4 cup sugar

Instructions

For the sweet potato puree:

Preheat oven to 450 degrees.
Wash sweet potato well and place in a baking dish and fill with about an inch with water.
Make a three inch slit from one end of the potato to the other and cover baking dish with foil.
Bake for about 30-45 minutes or until soft.
Take off the skin of sweet potato and puree or mash to desired consistency.

Waffles

Make 1/2 batch of SweetStacks waffle mix by combining mix, egg, oil, and milk.
Add 1/3 c sweet potato puree, all spice, cinnamon and brown sugar.
Make waffles!

Candied Pecans

Preheat oven to 300 degrees.
In a small bowl whisk egg whites and toss pecans in and coat well.
in another bowl combine cinnamon, brown sugar and sugar. You can also add a little cayenne pepper for some spice!
Combine the two mix
