Ingredients2 ½ cups Sweetstacks Gourmet Pancake & Waffle Mix
1 1/3 cups milk
6 tablespoons vegetable oil
5 tablespoons butter
3/4 cup firmly packed light brown sugar
3/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
3 tablespoons banana liqueur
3 medium bananas, peeled and sliced in circles
3/4 cup dark rum
6 tablespoons sweetened whipped cream
4 maraschino cherries
InstructionsPour waffle mix in a large bowl. Slowly whisk in milk until mixed. Whisk in eggs one at a time and
whisk in oil. Cook in a non-stick waffle iron according to instructions for the waffle iron.
Meanwhile, in a large skillet over low heat, melt the butter.
Stir in the brown sugar, nutmeg, and cinnamon until the sugar dissolves.
Add banana liqueur and stir to mix. Slice bananas into mixture.
Turn to coat and cook 1 minute. Remove bananas to a bowl with a slotted spoon.
Stir in rum and cook on low-medium heat for 3 to 5 minutes or until slightly thickened, stirring constantly.
Place 1 waffle on 4 plates. Top the 4 waffles with half of the sliced bananas.
Drizzle with half of the rum syrup. Top with another waffle and the remaining half of the sliced bananas.
Drizzle with the remaining syrup. Top with 1 1/2 tablespoons of whipped cream and a maraschino cherry.
