Ingredients24 (3-inch round) pancakes prepared per package instructions from SWEETSTACKS Gourmet Pancake Mix/Waffle Mix
1-1/2 cups sour cream
3 large eggs
1 cup half and half or light cream
1/4 cup maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
medium ripe but firm bananas, cut into 1/4" dice
1/2 cup chopped macadamia nuts
1/2 cup shredded sweetened coconut
InstructionsPreheat oven to 350 degrees F.
Place sour cream, eggs, half and half, syrup, cinnamon and nutmeg in a large mixing bowl and beat with an electric mixer until smooth and well blended. Grease or coat with non-stick cooking spary a 15"x10"x1" pan and spread 12 pancakes over bottom of pan, overlapping slightly where necessary.
Pour half of sour cream mix over top, being sure to coat all pancakes. Sprinkle evenly with bananas, nuts and coconut. Repeat layering with remaining pancakes and sour cream mix. Allow to stand 15 minutes for pancakes to absorb sour cream mix, tilting pan gently if desired so that mix will soak in.
Place in oven and bake 35-40 minutes or until pale golden brown in color and set around the edges. Cool 5 minutes before cutting. Slice into 12 portions and serve. Serves 12
