Ingredients
2 cups Sweetstacks Gourmet Pancake Mix/Waffle Mix
4 – Large Eggs (Separated)
1 cup – Milk
2/3 cup – Unsweetened Apple Sauce
1 Tbsp – Ground Cinnamon
Instructions
Separate the eggs so that one egg yolk and four egg whites are in a single bowl. Discard the remaining three egg yolks. Set bowl aside.
Combine the pancake mix, milk, applesauce and cinnamon together in a large bowl. Beat the eggs until the mixture starts to stiffen. Mix the eggs into the pancake batter.
Heat griddle to medium heat and cover it with non-stick cooking spray. Drop 1/4 cup batter onto the griddle for each pancake. Cook pancakes for a few minutes and flip. Let pancakes cook a few more minutes until done.
Remove the fluffy pancakes from the griddle and top with sugar-free maple syrup for a healthy, easy and yummy breakfast. Makes 12 pancakes, or 4 servings.
