Apple Fritters – Recipe Contest Winner

Ingredients

Oil for frying

2 cups SweetStacks Gourmet Pancake Mix/Waffle mix

½ teaspoon nutmeg

1 cup milk

3 apples, peeled, cored and sliced into rings

¾ cup powder sugar

Whipped Cream:

1 cup heavy whipping cream

1 tablespoon powder sugar

1 teaspoon vanilla

Instructions

Heat oil to 375 degrees F in a large skillet.

Combine pancake mix, nutmeg, and milk in a medium bowl. Mix well.

Dip apples in batter and place in skillet. Cook for 1 or 2 minutes. Turn and cook 1 or 2 more. Remove fritters and drain on a plate covered with paper towels. Sprinkle powder sugar over fritters.

Whip cream until almost stiff. Add sugar and vanilla. Beat until stiff peaks form. Place fritters on serving plate and dollop with whipped cream right before serving. Enjoy!
